Meet the Creature Crew: Deer Creek’s Most Imaginative Cheeses

Wisconsin has plenty of great Cheddar, but Deer Creek Cheese didn’t want “plenty”—they wanted extraordinary. Enter the Animal Series: a lineup where each cheese is a little wild, a little whimsical, and packed with flavor surprises. What started in 2006 as a modest operation focused on hand-selected 1- and 3-year Cheddars has become a creative playground where craft, curiosity, and imagination meet.

The first creature, The Fawn (just won silver at the World Cheese Awards 2025), was born from a collaboration with Wisconsin Master Cheesemaker Kerry Henning and brought to life visually by a teenage artist at home—Deer Creek’s daughter, Sophie. Her sketches set the tone: each cheese would be a character, each flavor a story. From there, kitchen experiments and long-time cheesemaking friendships gave rise to the rest of the series, including the silky, botanical Blue Jay, crafted with Master Cheesemaker Sid Cook of Carr Valley. Each release asks the same question: what could a classic Wisconsin cheese become if you let creativity run wild?

The Rattlesnake

A Cheddar that lives up to its name. This specialty cheese blends creamy, medium-aged Cheddar with premium gold tequila and dried habanero peppers. The tequila brings warm sweetness up front. Then, when the palate settles in, the heat strikes. The Rattlesnake earned gold for pepper-flavored cheese at the L.A. International Dairy Competition, and once tasted, it is easy to see why.

The Stag

Select wheels of The Fawn are set aside for deeper aging, transforming into The Stag. This traditional bandage-wrapped Cheddar shows off bold flavors with notes of toffee and butterscotch. As it continues to mature, it develops a delicate crystalline crunch that makes each bite fuller and more layered. The Stag has earned multiple first-place wins at the American Cheese Society and landed on Culture Magazine’s list of the 101 Best Cheeses of the Year.

The Swan

A quiet showstopper. The Swan pairs sheep’s milk Cheddar with a peppercorn-studded cow’s milk Cheddar, creating a striking visual and textural contrast. The result is rich, aromatic, and surprisingly graceful. The two cheeses meet in the middle the way its namesake birds do.

The Luna Moth

Here, Deer Creek takes handcrafted bandage-wrapped Cheddar and bathes it in elderflower liqueur. The infusion brings floral notes, a gentle sweetness, and hints of fruit that settle beautifully into the nutty base of the cheese. It is delicate and dreamy, the kind of cheese you savor slowly.

The result is a lineup that tells stories, sparks curiosity, and keeps Wisconsin cheese lovers on their toes. Deer Creek set out to make great Cheddar—and ended up building a world of creatures and flavors that continues to charm cheese cases everywhere.
