Cranberry Walnut Glazed Brie
Ingredients (serves 4–6)
- 1 wheel Supreme Mini Brie (7 oz)
- 1/4 cup dried cranberries, chopped
- 3 tbsp walnuts, toasted and chopped
- 1 1/2 tbsp maple syrup
- 1 1/2 tsp fresh thyme leaves
- 1/2 tsp unsalted butter
- Pinch of sea salt and black pepper
- Optional: a few drops of apple cider vinegar or orange zest
Instructions
- Preheat oven to 375°F (190°C). Place brie on a parchment-lined ovenproof dish and score the top slightly.
- Melt butter in a skillet over medium-low heat. Add thyme (30 sec), then walnuts (1 min). Stir in cranberries, maple syrup, salt, and pepper; simmer 1 min until syrupy. Add vinegar or zest if using.
- Spoon mixture over brie. Bake 15–18 min until the cheese softens and slightly sags.
- Let cool 3–4 min. Garnish with thyme sprigs and a drizzle of maple syrup. Serve warm with bread, crackers, or apple slices.
Smoked Bacon Brie
Ingredients (serves 4–6)
- 8 oz Fiorella Triple Cream Brie
- 3 slices applewood bacon, diced
- 1 medium yellow onion, thinly sliced
- 2 tbsp dry hard cider (or dry white wine)
- 1/2 tsp apple cider vinegar
- 1/2 tsp honey (optional, if onions are sharp)
- 1 tsp fresh thyme leaves
- 1 tbsp butter
- Sea salt and cracked black pepper
- To serve: crusty baguette, sliced pear or apple, fresh thyme sprigs
Instructions
- Preheat oven to 375°F (190°C). Place brie on parchment in a small ovenproof dish and score the top lightly.
- Crisp bacon in a skillet over medium heat. Remove, leaving 1 tsp fat.
- Caramelize onions in fat and butter for 12–15 min until golden. Deglaze with cider; reduce until syrupy. Stir in vinegar, thyme, and honey (if desired). Season to taste.
- Top brie with onion mixture and bacon. Bake 10–12 min until the cheese softens and just begins to ooze.
- Serve on a warm wooden board, topped with thyme sprigs. Pair with crusty bread and pear slices.
