This Irish-inspired toastie falls squarely in the second camp—where nutty Irish Porter Cheddar, sweet caramelized shallots, crisp bacon, and tart apple melt together between buttery slices of Irish soda bread. The result is rich, savory, a little sweet, and exactly the kind of comfort food that makes a grilled cheese feel like a proper pub-worthy upgrade.

Irish Porter Cheddar & Soda Bread Toastie
Ingredients
- Claddagh Bó Porter Cheddar, thick-cut slices
- Irish soda bread, sliced
- Butter, softened
- Apple slices, very thin (Granny Smith or Bramley suggested)
- Crispy streaky bacon
- Caramelized shallots
- Wholegrain or Guinness mustard
- Fresh thyme leaves
- Black pepper (freshly cracked)
Directions
- Butter the outside of each bread slice generously
- Inside layer:
- Thin smear of mustard
- Apple slices
- Warm caramelized shallots
- Crispy bacon
- Porter cheddar
- Pinch of thyme + black pepper
- Top with second slice, buttered side out.
- Cook low and slow in a pan or sandwich press until bread is crisp, cheese is melted and it is pressed gently. Enjoy & serve!
