Produced in the Jura Mountains near the French Alps, Comté has been part of French cheesemaking traditions since the 12th century. While Comté is absolutely worth eating straight from the board with a good crusty baguette nearby, it also plays well with simple pairings. Toasted nuts, crisp apples, dried fruit, and dry white wines all bring out its deeper savory notes without overpowering them.
