Cheese S’mores: The Sweet-and-Savory Treat for Summer

S’mores have long been the unofficial dessert of summer. The combination of graham crackers, chocolate, and a gooey toasted marshmallow has a way of bringing back memories of campfires, backyard gatherings, and family vacations. But lately, the classic treat has been getting a cheesy makeover.

The idea gained attention when Cabot Creamery released a limited-edition s’mores kit in 2024. Instead of sticking to tradition, the kit paired Effie’s oatcakes, chocolate, marshmallows, and slices of cheese—including Seriously Sharp Cheddar, Extra Sharp Cheddar, and Pepper Jack. The unexpected combination sparked a question: what cheese actually works best in a s’more?

As it turns out, quite a few.

Goat Cheese S’mores

Goat cheese may be the most natural swap for marshmallow. Its soft texture and bright tang help balance sweetness while still delivering a creamy bite.

For an easy version, place a square of milk chocolate on a graham cracker and top it with a coin of chèvre. Sprinkle with sugar and use a kitchen torch to brûlée the surface until golden and bubbling. The caramelized top adds a hint of smokiness while creating a surprisingly marshmallow-like texture.

Another simple combination? Cocoa biscuits topped with goat cheese and a drizzle of honey or your favorite fruit jam.

Brie Cheese S’mores

Brie brings rich, buttery flavor that pairs beautifully with chocolate. Instead of a traditional graham cracker, try a classic Effie’s oatcake topped with a slice of brie and a piece of dark chocolate.

Milk chocolate varieties that include caramel or honeycomb can work especially well, adding sweetness without overwhelming the cheese.

Blue Cheese S’mores

For those who like bold flavors, blue cheese offers a completely different take on s’mores.

A crisp ginger biscuit topped with a small amount of blue cheese and a piece of dark chocolate creates a sweet, spicy, and savory combination that’s surprisingly balanced. A little blue cheese goes a long way here.

Beyond the Campfire

Cheese and s’mores aren’t limited to crackers and chocolate. Point Reyes Farmstead Cheese Company has experimented with the concept in creative ways, including a s’mores-inspired grilled cheese sandwich. Their version layers aged Gouda on brioche with mini marshmallows, chocolate chips, and crushed graham crackers.

They’ve even taken the idea into dessert-drink territory with a s’mores milkshake finished with a light dusting of grated cheese.
