The journey continues through fermentation, one of the most important stages in developing cocoa’s flavor. After harvest, cocoa beans are fermented in controlled conditions that help create the aromas and taste notes that will eventually define the chocolate.
Once fermented, the beans are naturally dried in the sun before arriving at Simón Coll’s facilities, where each batch undergoes quality checks. The team evaluates factors such as color, texture, and fermentation consistency to ensure the cocoa meets its standards.
Roasting is where the chocolate’s signature character truly begins to emerge. By carefully controlling time and temperature, Simón Coll develops the rich aromas and flavors associated with fine chocolate. After roasting, the shells are removed and the cocoa nibs are sorted, with the highest-quality nibs reserved for specialty products while others continue on to become chocolate.
