Belle Saison Tomme: Six Months in the Caves of Isigny

From its rustic natural rind to its warm, golden-yellow paste, Belle Saison Tomme is a beautiful expression of Normandy cheesemaking. Made with rich milk from cows grazing the lush coastal pastures of northwestern France, the cheese reflects the unique character of its surroundings.

Isigny Sainte-Mère spent two years refining the recipe and aging process for Belle Saison. The wheels mature for six months in temperature- and humidity-controlled caves, where they rest on wood planks and develop their distinctive brown, naturally formed rind. Inside, the texture is smooth and semi-firm, with flavors that are floral and nutty, balanced by a gentle tang and a touch of earthy character from the rind.

That sense of place starts with the land. The Isigny region was once wetlands and is now known for its mineral-rich clay soils and abundant grasses. With the Atlantic nearby, the pastures produce nutrient-dense milk with subtle salty and floral notes—ideal for crafting exceptional dairy.

Isigny Sainte-Mère itself has deep roots in the region. Formed in 1980 through the merger of two Normandy dairy cooperatives, the company brought together generations of local dairy expertise. Today, its butter, cream, and cheeses continue to showcase the distinctive terroir of Isigny, with the cooperative’s cream famously regarded as the “grand cru” of the dairy world.

Belle Saison Tomme brings that same sense of place to the cheese counter: rustic, refined, and unmistakably Normandy.
