Founded with a simple mission, it focuses on premium handmade cheese made with real milk, salt, culture, and time, sourced from the Coquille Valley and Oregon’s Willamette Valley. Small-batch production and hands-on cheesemaking remain central to its approach.

The lineup spans classic and bold. The Aged Cheddar delivers a creamy, slightly nutty profile with a medium intensity—smooth and versatile without the sharp edge of more aged styles. 

A standout in the collection is the 2024 ACS award-winning Smokey Cheddar, cold smoked in-house with Northwest applewood. Rather than relying on liquid smoke or flavoring shortcuts, each batch is carefully smoked for a deeper, more natural character.

Flavor-forward favorites include Vampire Slayer Garlic Cheddar, known for its bold garlic infusion and smooth tang, and Peppercorn Harvest, a seasonal-inspired cheddar that has become a year-round staple. Onion and Chive Cheddar brings a savory, herb-driven lift, while In Your Face Spicy 3-Pepper Cheddar turns up the heat with jalapeño, habanero, and sweet red peppers layered into a fiery, award-winning profile.
