Sweet potatoes get a seriously cheesy upgrade with garlic-infused Vampire Slayer Cheddar. Creamy, buttery, and finished with a bubbly layer of melted cheese, this mash is made for National Potato Day.
Ingredients:
- 4 cups sweet potatoes, peeled, roughly cubed (3 medium sweet potaoes)
- 6 oz. Vampire Slayer Cheddar, shredded
- ¼ cup butter, softened
- ½ cup milk
- Olive oil
- Salt and pepper
Instructions:
- Heat oven to 400F
- Peel and cube sweet potatoes
- Place on a rimmed baking sheet and drizzle with olive oil. Sprinkle with salt and pepper.
- Bake for 20-30 minutes until sweetpotatoes are tender and lightly caramelized.
- Shred Vampire Slayer
- Remove sweet potatoes from the oven and place into a large bowl. Immediately add milk and butter. Mash until creamy.
- Mix in one cup of shredded Vampire Slayer.
- Spread the mash in an 8×8 baking dish, and sprinkle with remaining Vampire Slayer Cheddar.
- Return to the oven for 10 minutes or until the cheddar is melted and bubbly.
- Serve immediately.
