How to Pair Beer with Cheese

Wine may get most of the attention when it comes to cheese pairing, but beer brings some serious advantages to the table. For one, carbonation matters. The bubbles in beer help refresh the palate between bites, cutting through the richness and fat of cheese so each bite feels fresh again.

And while sparkling wine offers a similar effect, carbonation is built into the vast majority of beer styles. That gives beer an especially broad range of pairing possibilities.

Beer + Cheese

Beer is also remarkably complex. Its flavor comes from the interaction of malt, hops, yeast, water, and the brewing process, creating everything from sweet and toasty notes to bitterness, spice, fruit, roast, and floral aromas.

That bitterness is particularly useful at the cheese board. One of the basic rules of pairing is simple: bitterness can balance sweetness and cut through richness and fat. That makes a hoppy beer a natural partner for rich, creamy, or intensely flavored cheeses.

There are also two main ways to approach a pairing: contrast and resonance. A beer can either provide a complementary flavor—think caramelized malt with an aged cheese—or create contrast, such as a crisp, bitter beer alongside a rich and creamy cheese.

Beer + Cheese Pairings to Try
  • Pilsner + Fresh Goat Cheese or Mild Brie: Crisp and clean, a pilsner keeps delicate cheeses tasting fresh.
  • Wheat Beer + Brie, Camembert, or Feta: Soft, fruity, and often citrusy, wheat beers work beautifully with creamy or tangy cheeses.
  • Pale Ale + Sharp Cheddar: Balanced hop bitterness stands up nicely to cheddar’s bold flavor.
  • Brown Ale + Aged Gouda: Toasty, caramel-like malt notes echo the nutty, developed flavors of aged Gouda.
  • Saison + Washed-Rind Cheese: Peppery, funky saison flavors can hold their own alongside cheeses with plenty of personality.
  • Porter or Stout + Smoked Gouda or Blue Cheese: Roasty, dark beers bring enough intensity for smoky and pungent cheeses.
  • IPA + Blue Cheese or Aged Cheddar: The bitterness and hop character can cut through rich, assertive cheeses.

The next time you build a cheese board, consider reaching for a beer. With so many styles to choose from, there’s a pairing for nearly every cheese.
