You reach for a wedge of Gouda or Manchego and notice tiny beads of moisture forming on the surface. It may not look picture-perfect, but is your cheese still safe to enjoy?
In most cases, the answer is yes. That “sweat” is usually caused by either the natural fats in the cheese or simple condensation.
Cheese is made by culturing and coagulating milk, separating the curds, and pressing them into molds. The finished cheese contains proteins, fats, water, and other natural components. As cheese warms up, the casein proteins that give it structure begin to relax, allowing some fatty acids to rise to the surface as small droplets of oil.
The other cause is moisture. Many cheeses are wrapped in plastic, which can trap water vapor released from the cheese. That trapped moisture collects on the surface, creating the familiar sweaty appearance.
While sweaty cheese is generally safe to eat, it’s not always at its peak. When fats escape, the cheese can lose some of its creamy texture and flavor. Excess moisture can also encourage spoilage if the cheese is stored improperly for too long.
Higher-fat cheeses, including varieties like Cheddar and Swiss, are more likely to sweat, especially when left in warmer temperatures. This is why cheese boards that sit out for extended periods often develop a glossy surface.
To keep your cheese in top condition, remove it from plastic packaging and wrap it in cheese paper, parchment, or wax paper instead. These materials allow the cheese to breathe while helping manage moisture. When serving, take out only what you plan to enjoy and avoid letting cheese sit out longer than necessary.
A little cheese sweat may be harmless, but proper storage helps preserve the texture, flavor, and craftsmanship behind every wedge.
