The Ancient French Cheese Growing in Popularity in France

France is known for its deep-rooted cheese traditions, but one of its oldest cheeses is suddenly finding a new audience. 

Cancoillotte, a soft, spreadable cheese from the Franche-Comté region in eastern France, is experiencing a surge in popularity as consumers discover its unusually light nutritional profile. According to reporting from CNN’s original interviews and research, the centuries-old cheese has become a social media talking point thanks to French creators introducing it to audiences who had never encountered it before.

While cancoillotte has long been a regional staple near the Swiss border, it remained relatively unknown across much of France. That has changed in recent years as shoppers have become increasingly interested in foods that balance flavor with protein content and lower fat levels. 

Made from skimmed cow’s milk, cancoillotte offers a noticeably different nutritional profile than many traditional French cheeses. The cheese is naturally high in protein while remaining relatively low in fat and calories, making it appealing to consumers seeking lighter options without giving up cheese altogether. 

The cheese itself has a smooth, spoonable texture and can be enjoyed either hot or cold. Locals often serve it warmed over roasted potatoes and smoked sausage, while others spread it on bread as part of a simple breakfast or snack.

The category has also benefited from growing recognition of its heritage. In 2022, cancoillotte received Protected Geographical Indication (PGI) status, highlighting its strong connection to the Franche-Comté region and its traditional production methods. Today, more than 20 producers and hundreds of local dairy farmers contribute to its production, with brands offering everything from classic recipes to flavored varieties featuring garlic, nuts, truffle, and other ingredients. 

Among the producers helping introduce new consumers to cancoillotte is La Fromagerie du Charme, a small organic dairy farm in France’s Franche-Comté region. Run by two farmers and home to 30 Montbéliarde cows, the farm follows a pasture-based approach, with cows grazing for much of the year in a landscape rich with hedgerows, shrubs, and traditional stone walls. The herd is fed exclusively with forage grown on the farm, and part of the milk is transformed on-site into cream, butter, and cancoillotte. The dairy’s focus on biodiversity, animal care, and regional food traditions reflects many of the qualities that continue to attract consumers to this centuries-old cheese. 

Sales have steadily increased in recent years, suggesting that what was once considered a regional specialty may be finding a place in the broader dairy conversation. For an industry constantly looking for products that combine authenticity, nutrition, and consumer appeal, cancoillotte appears to be checking all three boxes.
