What Gives Soft-Ripened Cheese Its Velvety, Wrinkled Skin

If you’ve ever looked at a Camembert and wondered why its rind appears wrinkled, rippled, or almost velvety, the answer lies in a microscopic helper called Geotrichum candidum.

This yeast-like fungus is widely used in cheesemaking and plays a key role in developing the appearance, texture, and flavor of many soft-ripened cheeses. Cheesemakers may add it directly to the milk or curd, include it in the brine, or spray it onto the cheese surface after molding. In some traditional creameries, it can even develop naturally from the aging environment, contributing to a
cheese’s unique regional character.

Within days of inoculation, Geotrichum candidum begins spreading across the surface of the cheese, creating a thin, velvety coating. As it grows, it breaks down proteins and amino acids in the curd and produces ammonia, which gradually reduces the cheese’s acidity.

This shift in surface conditions encourages the growth of other beneficial cultures, including Penicillium candidum, the white mold responsible for the snowy exterior of Brie and Camembert. As these microorganisms work together during ripening, the rind becomes increasingly undulating and wrinkled, creating the distinctive appearance many cheese lovers recognize.


Beyond its visual appeal, Geotrichum candidum contributes sweet, buttery aromas and subtle yeasty flavors while helping soften the cheese from the outside inward. The result is a more complex, flavorful cheese and a rind that tells the story of the ripening process taking place beneath the surface.

For many cheesemakers, it’s one of the most important cultures in the aging room—and one of the reasons some of the world’s most beloved cheeses look as good as they taste.
